The 500 or 600 L Vinification barrel is based on a simple principle. Just after the harvest, the grapes are placed in barrels in which the entire vinification process will take place. With this barrel, fermentation takes place in a toasted new oak environment. This allows the oak aromas and tannins to combine with those of the grapes. This combination gives the “oakiness”, an “integrated” elegance and finesse, a perfect harmony between the wine and the wood.
